Tasting Notes: Richness meets precision with this Traditional Method Sparkling in a stunning example of finesse, elegance and complexity. The fruits are mostly sourced from our home vineyard in the Four Mile Creek appellation of Niagara-on-the-Lake, and showcase the world class potential of Chardonnay in the region. On the nose, the zesty aromas of lemon and green apple dominate before a hint of peach and pear bring a different dimension. On the palate, the texture is soft and smooth mirroring the aromas with a blend of citrus and orchard fruits, offering a loaded mid-palate and lengthy toasty finish and distinctive salty minerality.

Food Pairing: To complement the flavour profile of this Blanc de Blanc sparkling wine, a perfect food pairing option would be a fresh crab cake. The fresh and crisp lemon flavour in the wine enhances the flavours of the crab.
